Super Easy Cucumber, Ham, and Potato Salad
Gluten free, dairy free // As a side, serves 4-6
I’d eat this potato salad any hour of the day, any day of the week. Cheap honey ham is the best for the recipe. And don’t skip the sugar.
What you need:
5 oz russet potatoes, peeled and quartered (about 1 potato)
5 oz cucumbers (1-2 persian cucumbers, or ½ of an english cucumber)
5 oz honey ham (ask your deli clerk for ½ inch thick slices)
¼ cup Japanese mayonnaise (I use Kewpie or Shirakiku)
1¼ tbsp white sugar
How to make it:
add potatoes to boiling salted water and cook until soft, about 12 min.
once potatoes are done, allow to cool completely. then, dice into ½ inch cubes.
also dice your cucumber and ham into ½ inch cubes.
into a bowl, add cucumber, ham, potatoes, mayo, and sugar. toss to combine.
enjoy immediately or, even better, chill in the fridge for 1 hour before serving.
