Chilled Cranberry Apple Cider
vegan, gluten free // serves 4-6
Call it an edible simmer pot if that makes you happy.
what you need:
4 apples, sliced with the seeds removed
2 cups cranberries
1 orange, sliced
½ lemon, sliced
1 cinnamon stick, about 5 grams
4 cloves
1 star anise
1 small thumb ginger, about 15 grams, sliced
2 bay leaves
6 cups water
½ tsp vanilla extract
Honey to taste. I use around 1/4 cup.
how to make it:
in a large pot, add apples, cranberries, orange, and lemon. if desired, place loose spices (cinnamon, cloves, star anise, ginger, bay leaves) in a sachet for easy removal before adding to the pot as well. cover with water and bring to a boil.
reduce to a simmer. simmer for about 30 minutes, or until the cranberries burst and the apples fall apart easily when pressed with the back of a spoon. remove spices.
add vanilla extract and honey to taste. then, strain out the liquid and bottle in glass jars. the remaining solids can be eaten as an apple sauce (remove the citrus peels first)!
refrigerate until chilled, at least a few hours but flavors are best the next day. enjoy.
