Taro Chia Overnight Oats
VEGAN, Gluten Free // serves 2-4
Eat this breakfast if you want to start your day super happy. This is also your sign to go buy some good quality taro powder and start adding it to everything.
what you need:
⅔ cup rolled oats
4 tsp chia seeds
2 tbsp taro powder. I like to use Oakland Tea Company’s Taro Powder.
pinch of salt
1 ½ cups plant-based milk of choice. I like to use hemp or oat.
1 tbsp maple syrup
1 tsp vanilla extract
toppings of your choice. I use sliced mango, unsweetened shredded coconut, and cacao nibs.
TIP: recipe is highly adaptable and can be adjusted to your preference, but I’d recommend the listed ingredients and proportions to start.
how to make it:
add oats, chia, taro powder, and salt into a large jar. stir or shake to combine.
add milk, maple syrup, and vanilla extract into the jar. stir or shake to combine.
cover jar and place into the fridge overnight or for at least 6 hours.
to serve, transfer overnight oats into a serving bowl (or have it straight out of the jar). top with your favorite toppings and enjoy.
