Chilled Tea Jelly in Honeyed Milk
vegetarian, vegan option, gluten free // serves 4
Just another fantastic option in the world of chilled jellies (see also: grass jelly, lychee jelly, almond jelly). If you’re a milk tea lover like me, you’ll want to try this.
what you need:
6 g agar powder
220 ml water, room temp, for soaking the agar
800 ml water, brought to boil, for brewing the tea
4 tea bags or 10 tbsp tea leaves. I like to use Oakland Tea Company’s Organic Classic Milk Tea (a blend of ceylon and assam).
60 g rock sugar
2 tbsp honey. you can also use maple syrup or agave.
water to cover jelly
milk of your choice to serve. I like to use almond milk.
how to make it:
add agar powder and room temperature water into a small bowl and stir to combine. let sit for 5 min.
in a heat-safe bowl, combine boiling water and tea. let brew according to instructions or to your preference.
add agar mixture from step 1 into saucepan. bring to boil for about 10 min or until thickened, stirring frequently.
add rock sugar into saucepan with boiling agar mixture. stir to combine and let melt on medium low heat.
strain tea from step 2 into the saucepan and stir to combine.
strain contents of the saucepan into a 9x13 inch tray lined with plastic wrap.
allow to set. this takes about 30 min at room temperature.
cut set jelly into chunks with a spoon or knife and transfer into a jar. add honey/liquid sweetener and just enough water to cover jelly. stir or shake to combine and refrigerate until fully chilled.
